½ C. olive oil

1 egg

½ t. salt

¼ t. ground mustard

¼ t. black pepper

1 T. lemon juice

½ C. Parmesan cheese

Here are the instructions

Wash the lettuce and pull of spine, tear it into bite-size pieces, and place it into a large bowl.

In a measuring cup, mix together

½ tube of anchovy paste

1 t. minced garlic

1 t. Worcestershire sauce

½ C. olive oil

1 egg

½ t. salt

¼ t. ground mustard

¼ t. black pepper

1 T. lemon juice

Pour the dressing over lettuce, add ½ C. Parmesan cheese.

Toss and serve.

You can serve just like this, or you can add some rotisserie chicken if you like. It makes a quick and healthy meal.
