Steak Salad

Steak salad using seasoned steak, arugula, shaved parmesan cheese, toasted pine nuts, marinated onions, and olive oil. Doesn't get much simpler than that!


You can use your favorite cut of steak and whichever steak seasoning you like. I used the vinegar from the marinated onions and olive oil to dress this, but feel free to whip out your preferred salad dressing for this dish. An additional simple touch to elevate this salad would be adding fresh herbs if desired. You can of course add fresh veggies and substitute the cheese or nuts for other types.

Ingredients

  • 1 steak
  • steak seasoning of choice
  • 2 tbsp pine nuts
  • 1/4 red onion
  • 3/4 cups red or white wine vinegar
  • 2 handfuls of arugula
  • parmesan cheese to garnish
  • olive oil to dress
  • salt & pepper to taste
Instructions

Slice your onion then place them in a bowl with the vinegar to marinate while you prepare the dish (tip - the longer they marinate, the better they will be!)
Heat a pan on low and add your pine nuts. Make sure you are consistently moving them around as they can quickly burn. Once they're aromatic and golden brown, move them to a plate to prevent further cooking.
Using the same pan, add olive oil and add your seasoned steak. Cook each side to your preferred level of doneness then set it aside to rest.
Add the arugula to a plate, top with the pine nuts and marinated onions. Slice the steak and add it to the plate.
Top with shaved parmesan, olive oil, vinegar from the marinated onions, and salt & pepper.
