Sesame Seed Popcorn Chicken

You’d think KFC invented popcorn chicken. They did not. Bite-sized chicken nuggets were around long before they popularized it.
Popcorn chicken can be eaten as a lunch or dinner, but my absolute favourite way is as an appetizer. This recipe is also proof that popcorn chicken is not just for kids. Adults can indulge in these deliciously crunchy chicken bites too.
Instead of flour or potato starch, the marinated chicken is coated with sesame seeds. When deep fried, the chicken comes out tender and juicy, but it's the sesame seeds - browned, nutty and incredibly fragrant - that put this dish over the top. Use new sesame seeds if you can find them.
Perfect with steamed white rice, on its own or with beer
Frying merrily away.

Sesame Seed Popcorn Chicken

Ingredients
- Chicken thigh, boneless, cut into 1-inch cubes: 500 grams⠀
- Salt: 1/2 teaspoon
- Ginger, grated: 4 teaspoons
- Sake: 1/4 cup ⠀
- Soya sauce: 1/4 cup
- Mirin: 2 tablespoons
- Sesame seed: 1/2 cup
- Neutral flavoured oil: For deep frying
Instructions
- Mix together the salt, ginger, sake, soya sauce and mirin in a bowl until well combined. Add chicken cubes to marinate for 15 minutes. ⠀
- Squeeze excess marinade from chicken with hands and dredge each cube in sesame seed, coating both sides well. ⠀
- Heat oil in skillet over medium-high heat. Deep fry chicken in batches for 3 to 4 minutes until golden brown. Serve hot with steamed white rice or on its own.
