Easy Chipotle Chicken

Chipotle is always my go to fast-food. Why? Because it feels healthier than McDonald's or Wendy's and its comforting flavors never fail to hit the spot. So I decided to make Chipotle bowls at home. The key ingredient: chipotle adobo peppers. I use the canned ones blended with some water to create the perfect marinade for my chicken thighs. I also created a homemade salsa that added a level of freshness you don't even find at Chipotle. I highly recommend making your own salsa so it's as fresh as possible. You can use it in your Chipotle bowls and also save some for chips too.

Ingredients

  • 1 lb chicken thighs
  • canned chipotle adobo peppers
  • 1 cup water
Instructions

Slice chicken thighs in half and flatten.
Blend chipotle adobo peppers and water in blender. Start with 1/2 cup water and continue to add water to reach needed consistency.
Add marinade to a large bag with the chicken. Let sit for 30 min - 1 hr.
Heat 3 tbsp olive oil in a pan.
Once hot, add the marinated chicken and sear 4-5 min on each side, or until brown.
Take meat off the heat and let rest for 15 min.
