Chipotle is always my go to fast-food. Why? Because it feels healthier than McDonald's or Wendy's and its comforting flavors never fail to hit the spot. So I decided to make Chipotle bowls at home. The key ingredient: chipotle adobo peppers. I use the canned ones blended with some water to create the perfect marinade for my chicken thighs. I also created a homemade salsa that added a level of freshness you don't even find at Chipotle. I highly recommend making your own salsa so it's as fresh as possible. You can use it in your Chipotle bowls and also save some for chips too.

I would love to know Salsa and corn combo as well! Looks like corn, avacado and red onion, probably could squeeze lime juice over.

I assume we are to use boneless, skinless thighs?
