Ingredients needed for this recipe (scroll down to recipe card for complete recipe):
- Boneless, skinless chicken breasts
- Canned chipotle peppers in adobo sauce
- Canned diced green chiles
- Salsa
- Onion
- Knorr Tomato Bouillon with Chicken
- Seasonings (chili powder, smoked paprika, cumin, garlic powder, onion powder, salt & pepper)
Chipotle peppers in adobo sauce are smoked and dried jalapenos that have been canned in a spicy, piquant sauce made with tomatoes, vinegar, garlic, and spices.
The peppers are smoky, a little tangy, and super spicy. They add tons of flavor to anything you add them to!
- Simply add the chicken and spices to the slow cooker and top with the rest of the ingredients (except for the cilantro).
- When the chicken has cooked through, shred it and it’s ready for all your favorite Mexican dishes! (complete instructions on recipe card below)

Refrigerate leftovers in an air-tight container and use within 3-4 days.
You can also freeze the chicken in a freezer-safe container for up to 3 months.
This recipe gets a lot of its flavor from the canned chipotles in adobo, which are inherently spicy.
You could reduce the amount of chipotles in adobo, but you will also reduce the wonderful smoky flavor they add to the dish.
(Below) I used the chicken to make tacos and topped them with Serrano Salsa and cotija cheese.

Slow Cooker Chipotle Chicken

Ingredients
- 3 lb. boneless, skinless chicken breasts
- 1 tbsp Knorr Tomato Bouillon with Chicken link in post
- 1 tbsp chili powder
- 2 tsp. smoked paprika
- 1 tsp. cumin
- 1/4 tsp. garlic powder
- 1/4 tsp. onion powder
- 1/4 tsp. black pepper
- 1/2 tsp. salt
- 7 oz. can chipotles in adobo link in post
- 1/4 cup salsa
- 1/2 yellow onion sliced
- 4.5 oz. can diced green chiles undrained
- chopped cilantro optional garnish
Instructions
- Add chicken breasts to slow cooker. Top with bouillon, all of the spices, salsa, onion, and canned green chiles. Open the can of chipotles in adobo and dice the chiles. If you like spicy food, add the diced chiles and the sauce from the can to the slow cooker. To make less spicy, you could use some of the sauce instead of the chiles, or use a small amount of chiles.
- Cook on low for 4-6 hours, or until the chicken reaches 165° degrees. My chicken is done before 4 hours, but each slow cooker works differently.
- Using 2 forks, shred the chicken into your desired texture. Mix it in well with everything in the slow cooker. Top with cilantro if desired. This meat is excellent on taco salads, in burritos, on nachos, in quesadillas, in tacos, and as a filling for enchiladas. Enjoy!
