My Chipotle Chicken Soup has been a staple for years and on constant rotation in my kitchen when the weather cools. However, I recently started January Whole30 and have been learning all the ins and outs of this new program.


I decided to take one of my favorite soups and alter it a bit for Whole30. It’s

got a smoky and slightly spicy broth that’s perfect for a cold weather day! The

smoky-flavor comes from the dried chipotle peppers which pairs exceptionally well with the touch of lime juice squeezed on top. Trust me, you’ll have this delectable soup on rotation in no time.

Ingredients
Ingredients
  • 2 chicken breasts
  • 1 onion chopped
  • ½ cup chopped cilantro stems
  • 2 cartons of chicken stock
  • 2 cans of fire roasted tomatoes w/ chilis
  • 2 zucchini
  • 1-2 bell peppers
  • 2-3 dried chipotle peppers (or sub for 1tbsp of chipotle powder)
  • ¾ qt (3 cups) of water to rehydrate the peppers
  • 1 ½ tbsp of chili powder
  • 1 tbsp of garlic powder
  • ½ tsp cumin
  • salt/pepper
Toppings
  • Lime Juice
  • Cilantro
  • Avocado
  • Jalapenos
Instructions
The How To:
Start off by brining your chicken in 4 cups and water and ¼ cup of salt, for 40 minutes.
While this brines, begin rehydrating your peppers.Add your peppers to a small sauce pan and 3 cups of water and simmer on a low heat.
Next, heat your dutch oven on medium heat. Add oil and add your onions and cilantro stems. Saute for 3 minutes. Then all your dry spices in order to release some of their flavor.
Next add the liquid from your rehydrated chipotle peppers and then finely chop the peppers and add that as well. (remove seeds from peppers) (skip this step if you are subbing for chipotle powder).
Follow this by adding the canned tomatoes and the chicken stock. Bring to a boil and add your chicken to the broth, cooking between 5-7 minutes.
Remove the chicken and set aside to shred.
Next throw in all zucchini and bell peppers. Add the chicken back in and cook until veggies are soft but not mushy. Serve with any topping of your choice but be sure to finish it off with a splash of lime juice!
Tips
  • If you aren't doing Whole30, sour cream and cheese on top of this soup is excellent and highly recommended.
