Crockpot Chicken and “Dumplings”

With southwest Minnesota having a snow storm almost every week this winter, we are loving all of the comfort food and crockpot recipes! It just warms the house (and our bellies) right up and makes it extra cozy. This crockpot chicken and dumplings recipe is a super simple crowd pleaser. Think chicken pot pie meets dumplings. Although these are just refrigerator biscuits and not true dumplings, they are still just as delicious and satisfying. I use frozen mixed vegetables that includes carrots, peas, green beans, corn, and edamame but feel free to add extra veggies such as broccoli or mushrooms.

Ingredients

  • 2 large chicken breasts
  • 1 cup chicken broth
  • 1 can cream of chicken soup 
  • 1 cup frozen mixed vegetables 
  • Salt & pepper to taste
  • 1 tsp garlic powder
  • 1/2 tsp Italian seasoning
  • 1/2 tsp paprika
  • 1/4 tsp parsley
  • 1/4 tsp thyme
  • 1/2 can of refrigerated biscuits (4 biscuits) 
Instructions

Season chicken breasts with salt & pepper, garlic powder, Italian seasoning, paprika, parsley, thyme.
Place chicken in a greased crockpot.
Then add the chicken broth and cream of chicken soup.
Add more seasoning if desired and stir.
Cook on low for 2-3 hours or until chicken is done.
Shred or cut chicken and add back into crockpot.
Add in the vegetables.
Cut biscuits into fourths and roll into balls.
Place on top of chicken and veggies.
Cook for one more hour or until biscuits are cooked.
