Chicken with lemon is a winning combination and when you add to that plenty of potatoes and sweet potatoes and olive oil, it's no wonder the kids love it too. I love to make the lemon chicken the most before the holiday. one evening, my beloved mother-in-law brought me a bag of lemons from her tree that was torn under the burden of fruit. The lemons were yellow, fragrant, and juicy, and it was clear to me that I had to do something special with them.

When I started making the chicken pan for Friday dinner, I thought the lemons would go well with the chicken pieces. Everyone devoured the dish, and really liked it and we decided that it would be special for the holiday because of its taste. The potatoes come out so soft in the mouth that it's just perfect.

  • 3 medium chicken legs
  • 5 medium chicken thighs
  • 3 medium potatoes
  • 1 medium sweet potato
  • 1/2 cup olive oil
  • 1 teaspoon coarse salt
  • 3/4 cup boiling water
  • 1/2 medium lemon
  • 1/2 tablespoon ground black pepper
  • 1/2 tablespoon turmeric
  • 1/2 tablespoon sweet paprika
Preparation of the marinade - mix all the ingredients of the marinade
  • 4-5 tablespoons olive oil
  • 2 tablespoons of honey
  • 2 tablespoons soy sauce
  • 3 tablespoons of lemon juice (if you don't like sour then 2 tablespoons)
  • 1 teaspoon sweet paprika
  • 1/2 tablespoon fine salt
  • 1/2 tablespoon ground black pepper
  • 4 minced garlic cloves
  • 1 tablespoon cornstarch
  • 1/2 tablespoon turmeric
Preheat oven to 200 degrees Celsius.
Peel the potatoes and sweet potatoes, slice fine and arrange at the bottom of the pan.
Pour olive oil over them, season with the coarse salt and black pepper, add the boiling water mixed with half a teaspoon of turmeric and half a teaspoon of paprika.
After an hour in the marinade, arrange the chicken over the potatoes and pour over the remaining marinade. Slice the lemon into thin slices and arrange over the chicken.
Cover the pan with foil and bake for about an hour. Remove the foil and continue roasting for additional 20 minutes. Transfer your oven to grill mode and roast to a nice browning.
If the oven is too hot, lower to 180 degrees Celsius
