Yummy Onion Chicken

When life gives you onions, make onion chicken! I accidentally got a bag of onions not realizing I had already gotten a bag of onions... but that is ok because onions are the most delicious thing. Not convinced? What other vegetable is more versatile then the onion? Its great in a salad or with any other vegetable but if you cook it it becomes sweet! So in my humble opinion, onions are the best. Why else would they sell onion powder?

Slice two onions and throw into a pan with some oil.

Cover and cook on low heat for about 30 minutes. The onions will start caramelizing.

Once they are broken down and really tender and browning, throw them on top some raw chicken breast or thigh and stick in the oven at 400 degrees for 45 minutes.

Cover the pan with foil and add 1/2 cup water for the chicken to cook more tender.

Once the chicken feels tender with a fork uncover and cook for another 5 minutes. You can also add some Mexican cheese on top and melt in the oven.

This dish is great with a side of green beans.

  • 4 chicken breasts

  • 1 tablespoon of oil
  • salt and pepper to taste
