Vic’s Tricks To…Easiest BBQ Grilled Chicken
It’s grillin’ season!
OK, in my world, it’s always grilling season. But, there’s something special about the summertime.
When it comes to summertime staples, it doesn’t get much better than BBQ chicken.
And the best news, is it’s the simplest thing EVER!!!
Vic Trick: You can totally use a cast iron or regular pan for this too, but the timing will vary. Otherwise, the process is the same!
I like to use chicken breast for my BBQ chicken, but you can use any cut you want. Again the timing will vary.
I love a drumstick here too!
Preheat the grill to high heat, it takes about 5 minutes to truly preheat.
Vic Trick: When grilling meats, you always want your grill to be fully preheated and SUPER HOT. This will give you a good sear and prevent the meat from sticking.
Meanwhile prepare the chicken by patting it dry with a paper towel, then to both sides, add a bit of oil, salt, pepper, and paprika.
Vic Trick: Patting the chicken dry with the paper towel will also give you that gooood sear, which is always what we’re looking for when it’s GRILL TIME. Also really any time.
Add the chicken to the grill, doesn’t really matter which side first, and close the grill. Cook for about 5 minutes, then flip.
Once you flip, brush on your fave BBQ sauce.

Let the chicken cook for another 5 minutes, then lower the heat to medium and repeat this process: flip the chicken, brush with BBQ, wait 2 minutes, flip and brush again.
Vic Trick: Chicken breast is done at 165°, but I usually take mine off around 160° and cover it with foil to keep it warm while it rests until serving.
Up to you if you wanna add more BBQ on top, but I HIGHLY recommend it.

Ingredients
- 4 chicken breasts (or thighs or drumsticks or wings)
- 1 tbsp olive oil
- 1 tbsp paprika
- Salt & pepper
- 1 cup BBQ sauce
Instructions
- Preheat the grill to high heat, it takes about 5 minutes to truly preheat.
- Pat the chicken dry with a paper towel and coat with the oil, paprika, salt & pepper.
- Add the chicken to the grill and cook for 5 minutes.
- Flip and brush on some BBQ sauce and let the chicken cook for another 5 minutes.
- Lower the heat to medium and repeat this process: flip the chicken, brush with BBQ, wait 2 minutes, flip and brush again until the chicken reaches 165°, about 16-20 mins.
- Top with more BBQ sauce and enjoy!
