Ingredients

  • 2 boneless, skinless chicken breast
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 orange bell pepper
  • 1 sweet Vidalia onion
For the Sauce
  • 1/4 cup balsamic vinegar
  • 2 tbsp. honey
  • 1 tbsp. Dijon mustard
  • 1 tsp. minced garlic
  • salt and pepper to taste
Instructions

Preheat oven to 425 degrees
Line a large baking sheet with aluminum foil and spray with non-stick cooking spray
Cut the chicken, bell peppers, and onion into chunks and toss together in a large bowl
Bring all of the sauce ingredients to a boil in a small saucepan
Once sauce is boiling, turn down heat to a simmer, whisking occasionally, until the sauce has thickened
Pour half of the sauce over the chicken, peppers, and onions and toss until fully coated and then place on large baking sheet.
Bake for 30 minutes, tossing halfway through.
Drizzle remaining sauce over top and enjoy!
Tips
  • If you like your vegetables a little crispy, turn the oven to boil to finish cooking the sheet pan chicken and vegetables for 2-3 minutes before serving.
