When I was younger and a super picky eater, this was surprisingly one of the meals I loved to eat. As my palette has expanded, I haven't eaten this in years. Honestly, I had never even cooked it before because this was before I even started cooking. I was craving something comforting and whipped this together. It was just as good as I remember!


Since going gluten free, I've been eating a lot of rice and chicken. These two ingredients are so versatile, so every time I cook something it tastes completely different than the last. This meal is definitely worth a try!

Ingredients

  • 4 chicken breasts, diced or shredded
  • 4 cups chicken stock
  • 2 cups rice
  • 1 can diced pineapples in juice
  • 1 cup chopped carrots
  • 1 cup chopped green pepper
  • 1/3 cup ketchup
  • 2 tbsp soy sauce
  • 2 tbsp white vinegar
  • 2 tbsp brown sugar (optional)
  • 2 minced garlic cloves
  • 1 diced white onion
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
Instructions

Heat oil in a pot then add diced chicken breast, white onion, green pepper, carrots, and minced garlic
Season with salt, pepper, garlic powder, and onion powder
Cook the chicken through then add the can of pineapples, chicken stock, rice, vinegar, ketchup, soy sauce, and brown sugar
Stir together then bring to a boil
Cover and let simmer until all liquid is absorbed then fluff with a fork
Garnish with chili flakes
