Honey Garlic Chicken Stir Fry
Recipe details
Ingredients
- Olive oil
- Salt and pepper, to taste
- 1 lb boneless skinless chicken breasts, cut into 1 inch pieces
- 3 carrots, peeled and thinly sliced
- 1 large head bok choy, chopped
- 1/2 cup honey
- 1/4 cup coconut aminos (or gluten free soy sauce)
- 3 garlic cloves, minced
- 1 tsp fresh ginger, minced
- green onions, to garnish
Instructions
- Season pieces of chicken with salt and pepper.
- Add olive oil to pan over medium heat.
- Once oil is hot, add chicken to pan and cook 3-4 mins on each side until golden brown and cooked through.
- Remove chicken from pan, place on plate and cover.
- Add more olive oil to pan if needed and saute carrots for 2-3 mins.
- Add bok choy to pan and let cook for another 2 mins until fork tender.
- While vegetables are cooking, in a small bowl whisk together honey, coconut aminos, garlic and ginger.
- Add the cooked chicken to the pan and pour in sauce. Cook until sauce thickens a little- about 3 mins.
- Remove from the pan and serve over rice or cauliflower rice, garnish with green onions.
