Grilled Greek Chicken Skewers

Easy, delicious dinners are what I'm all about. I love meals that are quick to prepare and are delicious for the whole family to enjoy!
These Greek chicken skewers are a favourite in my house. They are tender, juicy and so tasty! The marinade is simple and can be whipped up with ingredients you probably already have on hand. I like to use boneless skinless chicken breasts in this recipe however using any chicken you've got would be great!
I like to serve these with lemon potatoes or lemon rice and Greek salad for an easy weeknight meal. Enjoy this tasty dish!
Grilled Greek Chicken Skewers

Ingredients
- 4 boneless skinless chicken breasts, cut into 1-inch cubes
- 1/2 cup olive oil
- Zest from 1 lemon
- Juice from 2 lemons
- 3 cloves garlic, minced
- 1/2 tsp each; salt and pepper
- 2 Tbsp Greek seasoning
- 1/4 cup dill, finely chopped
- 1/2 cup crumbled feta cheese
Instructions
- Dice chicken breast and place in large freezer safe bag. Set aside.
- In a large glass measuring cup, mix together oil, lemon zest and juice, garlic, salt, pepper and Greek seasoning. Whisk together.
- Pour marinade over prepared chicken. Close the freezer bag and shake to evenly coat the chicken. Place in the fridge for up to 4 hours.
- Once marinated, place pieces of chicken on metal bbq skewers.
- Heat your grill to 400 degrees and cook until chicken is done, about 15-20 minutes.
- To serve, place chicken skewers on serving tray and top with chopped dill and crumbled feta cheese. Serve hot and enjoy!
