These Greek chicken skewers are a favourite in my house. They are tender, juicy and so tasty! The marinade is simple and can be whipped up with ingredients you probably already have on hand. I like to use boneless skinless chicken breasts in this recipe however using any chicken you've got would be great!


I like to serve these with lemon potatoes or lemon rice and Greek salad for an easy weeknight meal. Enjoy this tasty dish!

Ingredients

  • 4 boneless skinless chicken breasts, cut into 1-inch cubes
  • 1/2 cup olive oil
  • Zest from 1 lemon
  • Juice from 2 lemons
  • 3 cloves garlic, minced
  • 1/2 tsp each; salt and pepper
  • 2 Tbsp Greek seasoning
  • 1/4 cup dill, finely chopped
  • 1/2 cup crumbled feta cheese
Instructions

Dice chicken breast and place in large freezer safe bag. Set aside.
In a large glass measuring cup, mix together oil, lemon zest and juice, garlic, salt, pepper and Greek seasoning. Whisk together.
Pour marinade over prepared chicken. Close the freezer bag and shake to evenly coat the chicken. Place in the fridge for up to 4 hours.
Once marinated, place pieces of chicken on metal bbq skewers.
Heat your grill to 400 degrees and cook until chicken is done, about 15-20 minutes.
To serve, place chicken skewers on serving tray and top with chopped dill and crumbled feta cheese. Serve hot and enjoy!
