When I think about crockpot recipes, I think about winter and cozy meals. Well even though winter is finally over, the crockpot recipes are not! They are so convenient even during the summer time, especially if you have a busy schedule. This crockpot queso chicken is one of our favorites at our house. It is basically just a dump and leave alone type of meal, which I love. You don’t need too many ingredients and it’s so delicious. You can serve the queso chicken over rice alone, which is my favorite, or turn it into a burrito bowl and add greens and extra veggies, or it’s just as yummy in a taco shell! Enjoy!

Ingredients

  • 2 chicken breasts
  • Taco seasoning to taste
  • 1/2 cup chicken broth
  • 1 cup queso blanco
  • 1 cup Rotel
  • 1/4 cup diced green chiles
  • 1 cup black beans
  • 1 cup corn 
  • 1/2 cup shredded cheese 
Instructions

Season chicken breasts generously with taco seasoning and place in a greased crockpot.
Add in chicken broth, queso, rotel, green chiles, black beans and corn.
Cook on low for 4-5 hours or until chicken shreds easily.
Shred chicken and mix in the shredded cheese.
Serve however desired.
