Lean boneless, skinless chicken breast are covered in caramelized onions, mushrooms and savory mozzarella cheese and baked into a gooey goodness.

Sauté the mushrooms and onions on low heat for a longer time to create a caramelized coating that is absolutely delicious.

Season the chicken breast and brown them on both sides to create a golden, crispy crust.


Top the chicken with mozzarella cheese and white wine or chicken stock to make them super juicy and cheesy.

Cheesy Mushroom Chicken pairs well with mashed potatoes, rice or pasta and a vegetable or salad. Pair it with mashed cauliflower or rices cauliflower for a low carb option!

Ingredients

  • 1 tbsp. butter
  • 2 tbsp. olive oil
  • 2 tbsp. Worcestershire sauce
  • 2-4, boneless, skinless chicken breast
  • 1 large yellow onion, sliced
  • 8oz sliced mushrooms
  • 1/2 cup dry white wine or chicken stock
  • 3/4 cup shredded mozzarella cheese
  • 1 tbsp. minced garlic
  • 1 tsp Italian Seasoning
  • Salt and pepper to taste
Instructions

Preheat oven to 375 degrees
Heat 1 tbsp. butter and 1 tbsp. olive oil in a large skillet over medium high heat.
Add onions, mushrooms, and garlic and cook stirring occasionally for 2 minutes.
Add the Worcestershire sauce, reduce heat to medium low and continue cooking for 10 minutes or until mushrooms and onions are golden brown.
Place half of the mushrooms in the bottom of a 9x13 baking dish, save the other half for later.
Meanwhile, heat remaining olive oil in a large skillet over medium high heat and season chicken breast with Italian seasoning, salt and pepper.
Add chicken breast to skillet and brown on each side for about 2-3 minutes.
Place chicken breast over mushroom and onions and pour the other half of mushroom and onions over the chicken.
Sprinkle mozzarella cheese over chicken, mushrooms and onions.
Reduce skillet heat to low and pour white wine or chicken stock in to deglaze the pan. Cook for about 2-3 minutes or until liquid is reduced.
Pour liquid over chicken.
Bake for 20 minutes, let rest for about 5-10 minutes
