Looking for a super easy, healthy and kid friendly recipe to start off the new year? Look no further than this 4 ingredient cheesy chicken mushroom bake.
While it may not look like much, the flavors are savory and comforting making it the perfect family week night meal.
This one pan meal is so easy to make with minimal steps and ingredients.
Start by sautéing 2, 16oz packages of sliced mushrooms until golden, then add diced up chicken and sauté until browned.
Mix the mushrooms, chicken and cream of mushroom soup together in a large 9x13 baking dish.
Cover with cheese and bake!
The end result is a cheesy, savory meal that is delicious served over rice, pasta or potatoes.
Cheesy Chicken and Mushroom Bake
Recipe details
Ingredients
- 2lb boneless, skinless chicken breast, diced into 1in cubes
- 2, 16oz packages sliced mushrooms
- 1, 10.5oz can of low sodium cream of mushroom soup
- 1 bag of sliced mozzarella cheese (about 10 slices)
- 2 tbsp olive oil
- 1 tsp Italian seasoning
- 1/2 tsp garlic powder
- salt and pepper to taste
Instructions
- Preheat oven to 375 degrees
- Heat large skillet over medium high heat and add 1 tbsp olive oil
- Add mushrooms and sauté’ until tender, about 6-8 minutes, season with salt and pepper as they cook
- Add mushrooms to a 9x13 baking dish
- Add remaining 1 tbsp olive oil, chicken, garlic powder, Italian season and salt and pepper to pan
- Sauté’ about 6-10 minute until chicken is browned and cooked through.
- Add chicken and cream of mushroom soup to baking dish
- Stir to combine chicken, mushrooms and soup
- Top with Mozzarella sliced cheese
- Cover and bake for 20 minutes
- Uncover and set the oven to broil. Broil for 2 minutes
Tips
- Serve over potatoes, pasta or rice. Can serve with riced or mashed cauliflower for a low carb meal.
