Air Fryer Parmesan Breaded Chicken

I know I am late to the game, but I received an air-fryer for Christmas and I could not love it more. What a fantastic time and calorie saver! To be able to prepare delicious, crispy food without a ton of added fat from oil, is wonderful. I have had so much fun experimenting with it over the holidays.


This weekend, I decided to try out my Parmesan chicken recipe in it. It turned out perfectly. It was super easy, required minimal ingredients, and was ready in under 30 minutes. With only 220 calories and 6g carbs per serving, this is a guilt free recipe to start your new year off right!


The best part was that my toddler loved it. You just can not beat an easy, healthy recipe that the kids also enjoy.


Air fryer chicken is crispy on the outside while remaining juicy and tender on the inside.

This is an easy, two step recipe. Simply dip each chicken breast in the Greek yogurt mixture and then the bread crumb mixture before baking.

Air-fryer chicken cooks in less than 20 minutes.

Parmesan chicken is perfect with a side of my roasted broccoli or parmesan green beans or on top of a fresh salad.

Ingredients

  • 4, small chicken breast (about 4oz each) OR 2 large chicken breast, sliced horizontally in half
  • 1/2 cup bread crumbs
  • 1/2 cup Parmesan cheese
  • 1/4 cup plain Greek yogurt
  • 1 tbsp. honey mustard
Instructions

1. Mix Parmesan and bread crumbs together in a shallow bowl.
2. Mix Greek yogurt and honey mustard in a separate bowl.
3. Dread chicken in yogurt mixture and then bread crumbs.
4. Place on air-fryer pan, sprayed with cooking spray to prevent sticking.
5. Cook at 380 degrees for 10 minutes. Turn and rotate the chicken, and cook for an additional 5 minutes.
