White Chocolate Strawberry Tarts

Nothing screams summertime to be more like fresh strawberries! Where I live, strawberry season is upon us and heading out the the farmer's patches to pick is one of my all time favourite memories! These white chocolate strawberry tarts would be the perfect use of some freshly picked berries!

To make these tarts, starts off with a premade pie shells (could totally make your own, but I don't have time for that!). Next comes the light and fluffy white chocolate mousse that compliments the naturally sweet berries just perfectly.

The best part? The mousse can be made up to 3 days in advance! Assemble these beauties right before you're ready to eat and enjoy! Happy summer!

  • 12 premade tart shells, prepared according to package instructions
  • 1 brick cream cheese, softened at room temperature
  • 1 cup heavy cream
  • 4 Tbsp sugar
  • 1 tsp vanilla extract
  • 1/2 cup white chocolate, melted
  • 3/4 cup strawberries, finely diced

Before you begin, place mixing bowl and whisk attachment in the freezer for at least 10 minutes.
Prepare tart shells according to package instructions. If they require baking time, ensure they are cooled down before filling. Set aside.
Take out chilled mixing bowl and whisk. To the chilled bowl, add in heavy whipping cream and beat until stiff peaks form, about 7-8 minutes. Transfer whipped cream to another mixing bowl and set aside.
To the same large mixing bowl you have used from the whipped cream, beat softened cream cheese until smooth.
To the cream cheese mixture, beat in sugar and vanilla. Drizzle in the melted white chocolate until combined.
Use a spatula and fold in the prepared whipped cream until combined.
Cover bowl with plastic wrap and allow to set up in the fridge, about 4 hours or up to 3 days.
To assemble, place white chocolate mousse in a piping bag and pipe mixture into each prepared tart shell. Spoon fresh strawberries on top and enjoy!
