Baked Pumpkin Donuts

These delicious baked pumpkin donuts are easy to make and perfect for any time of year. The pumpkin makes these a little healthy, right?!


It’s not difficult to make baked donuts. They’re actually easier than you might think and they’re fun to make AND eat.


If you have kids at home, these baked pumpkin donuts are a great treat that they can help make. These donuts also have the added benefit of being on the healthier side so you don’t have to feel guilty about serving them up for a snack, breakfast on the go, and an anytime dessert.

If you’ve never made homemade donuts you are missing out! It’s really simple and the end result is a delicious treat that you can feel good about enjoying.

Some baked goods and especially things like bread, bagels, and even donuts can need time to rise. That’s not the case with this quick baked donut recipe.


We’re also not frying these donuts so you really don’t have to worry much about the extra steps involved in a traditional donut recipe.

Ingredients

  • 2 cups of flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 2 eggs
  • A pinch of salt
  • 2 teaspoons of pumpkin spice
  • ½ cup of softened butter
  • ½ cup of packed brown sugar
  • ½ cup of white sugar
  • 1 cup of pure pumpkin puree
  • ⅓ cup of heavy cream
  • 1 teaspoon of vanilla
  • Nonstick cooking spray
  • For topping:
  • ¼ cup of Brown sugar and 2 teaspoons of pumpkin spice, mixed together.
  • 2 tablespoons of melted butter
Instructions

Preheat the oven to 375 degrees.
Spray nonstick cooking spray into the wells of a donut pan.
In a mixing bowl combine softened butter and both brown and white sugar.
Cream together for 1 minute.
Add eggs, pumpkin puree and heavy cream and mix until smooth.
Add in vanilla and stir for a few seconds.
In a second mixing bowl, combine flour, salt, baking powder, baking soda and pumpkin spice. Stir together until well mixed.
Begin adding the dry ingredients to the wet ingredients, stirring as you add. Mix until everything is well blended.
With a small spoon, carefully spoon the batter into the wells of the donut pan, filling ⅔ full.
You could also transfer the batter to a piping bag, and fill the wells of the pan, if you prefer.
Place the donut pans onto a cookie sheet, and bake for 10 to 12 minutes. Test with your finger for doneness. If you press into the donut lightly, the dough should bounce back. If your finger imprint stays, bake for a few more moments.
Allow to cool for about 5 minutes, in the donut pans before transferring to a wire rack.
When all of the donuts are on the wire rack, brush melted butter over the tops of the donuts and then sprinkle the brown sugar and pumpkin spice mixture over top.
