Puff pastry is having it's very best seasonal moment right now. It is such a versatile item to have on hand in the kitchen and I think it really can just shine through and make a dish look as though you have spent hours on it. I especially love puff pastry during the holidays and hosting season when you would rather spend your time socializing with friends and family as opposed to laboring in the kitchen for hours on end.


I made a big batch of cooked apples this fall after picking in September. I peeled and cored the apples and then cooked them down with some sugar, corn starch and all sorts of yummy spices like nutmeg, cinnamon, and cloves.


I created a quick recipe below if you want to spend a bit of time cooking down some fresh apples. I don't really have a good way that you should make this recipe without cooking the apples first. The issue with raw apples is they are full of water and I don't think that would work as well. Apples really do not take too long to cook down, and I promise the smell your home has afterwards is worth it!


Once you've got your apples--make some extra and freeze them for next time! This recipe is a cinch. Roll out your puff pastry on floured surface and cut as shown in the photos below. You will almost be braiding your puff pastry and it just looks so darn pretty!

Ingredients
Apple Danish
  • Approximately 1.5-2 C of cooked down apples (See recipe)
  • 1 sheet of frozen puff pastry, thawed (the box usually comes with two, so you can make two danishes or save the other sheet for something else you create)!
  • 1 egg for egg wash
  • coarse sugar for topping
Sautéed Apples (makes about 2 C)
  • 1/8 C butter (unsalted)
  • 2 large apples peeled, cored, sliced thin
  • 1/4 C cold water
  • 1 tsp corn starch
  • 1/4 C brown sugar or granulated
  • pinch of cinnamon
  • smaller pinch of nutmeg
Instructions
Sautéed Apples
Peel, core, and thinly slice your apples
Heat butter in skillet over medium-low heat
Cook your apples, stirring frequently until the soften about 5-7 minutes
Whisk corn starch and water together and pour over the apples, stirring
Add sugar and spices and stir
Bring to a boil for 2-3 minutes and remove from heat
Let cool completely before assembling your danish
Apple Danish
Cook and prepare your apples to cool before assembling
Heat your oven to 400 degrees F
Roll out your sheet of puff pastry on a clean floured surface (you don't need to roll much, but try to make it more of a rectangle and about 2-3 inches longer than it is (this will give you a longer danish)
Cut the puff pastry as shown in the photos below
Add your cooled apple filling along the center of the puff pastry
Fold over and begin to braid the puff pastry over the top.
Wash the top with an egg wash and sprinkle coarse sugar over top
Bake for about 18-20 minutes until just beginning to become golden brown. It may take a bit longer for you depending on your oven, etc. Always monitor baking items!!
Tips
  • Your apples won't look quite like mine because mine were previously cooked down for pie filling. The sautéed look will be beautiful, though!
  • Feel free to make a glaze out of powdered sugar, milk, and vanilla extract for the top if you would like. However, I recommend trying it first as it is plenty sweet!
