- 2 beef bouillon cubes
- 1 tablespoon white wine vinegar
- 1 green bell pepper, seeded and cut into 1-inch pieces

Mix bouillon cube in hot water and deglaze the bottom of the skillet with the stock, scraping to remove any cooked on pieces.
Pour the liquid over the steak in the slow cooker.
Add red and green peppers, stewed tomatoes to the beef mixture.
Combine cornstarch, water, garlic powder, soy sauce and vinegar in a small bowl. Pour over the steak.
Season with salt and black pepper, if desired.
Cover the slow cooker and cook crock pot pepper steak on high for 3 to 4 hours or low for 6 to 8 hours.
Slow cooker pepper steak is a hearty dish that can be served with:
- Mashed potatoes, roasted potatoes, cauliflower rice
- White rice or brown rice,
- Egg noodles to make it even heartier
- Vegetables like cauliflower or broccoli work as well
There are several options for pepper steak and each will make a big difference in this easy recipe.
For best results, use thin-sliced beef strips, sirloin tip or even round steak, as they are a less expensive option with the same flavors.
Skirt steak or flank steak is another option as they are both tender and flavorful, holding up well with the marinade, but is on the pricey side.
When it comes to choosing the best cuts of meat, stew meat or chuck steaks are not a good option. Although this particular cut of beef can be flavorful and affordable; its toughness does not make it worth buying.
- Store your leftover pepper steak in the fridge in an airtight container.
- Reheat your leftovers in the microwave or in a skillet.
- This is a great meal prep meal because you can freeze leftovers for up to three months if needed.

Right now everything is so expensive. I found during lock down and grocery delivery frozen peppers and onions will do in a pinch and they don't go rotten. Cost so much less. Even fresh vegetables will break down a bit. I will make it.
