Spicy Sausage Pasta

Nothing like a spicy dish to help clear congestion! With the weather changing, I've unfortunately come down with a cold. All I'm craving is soup, comfort food, and everything spicy. This dish is easy to throw together and is so delicious. Full of garlic, spices from the sausage, and topped with Parmesan cheese. You can use any type of pasta, but I chose gluten-free spaghetti. You can also toss in spinach or arugula for some extra color and veggies.


I felt that the pasta was flavorful enough without adding a sauce, but if you prefer a saucey pasta you could definitely add one!

Ingredients

  • 55g dried gluten free spaghetti
  • 2 spicy sausages (Italian, chorizo, etc.)
  • Parmesan cheese to garnish
  • chili flakes to garnish
  • fresh parsley to garnish (optional)
Instructions

Bring a large pot of generously salted water to a boil. Once the water is boiled, add the spaghetti and cook per labeled instructions.
While waiting for the water to boil, cook the sausages on a pan, rotating them until fully cooked through. Once the sausages are cooked, add them to a food processor to ground up the meat.
Drain the spaghetti, reserving 1 cup of the pasta water and quickly toss the spaghetti with olive oil to prevent it from sticking
In a pan, add the ground sausage and minced garlic cloves. Saute until aromatic then add the pasta with the reserved pasta water.
Let the water thicken, becoming more of a sauce, then serve
Garnish with fresh parsley, chili flakes, and Parmesan cheese

    The ingredients list seems too short and then I see garlic and olive oil added to the directions. Are those the only missing ingredients from the list?

      For me, recipes are more guidelines than rules. There’s always room for customization to fit the wants of the intended audience.
