Beans make a great side dish, especially for potlucks and picnics! Here’s a special version of beans that have that rich baked bean flavor, along with smoked sausage and some other sweet-and-savory ingredients—Smoked Sausage and Beans. Because it’s a hearty dish, it can work either as a side dish or main dish! And no baking is involved so it won’t heat up your kitchen when the weather is hot!

You can cook this dish up on your stove top or make it in your slow cooker. If you want to serve it as a main dish, include some cornbread or crusty bread and a salad to round out your meal! Or serve it over rice! And of course, it works great on its own as a side dish.

Ingredients

  • 1 (28-ounce) can Baked Beans, undrained
  • 1 (15.5-ounce) can Pinto Beans, undrained
  • 1 (15.5-ounce) can light or dark Red Kidney Beans, undrained (you can substitute Navy Beans for the Red Kidney Beans or Pinto Beans)
  • 1 medium-size yellow onion, chopped
  • 1 medium-size red bell pepper, chopped
  • 1 1/2 teaspoons minced garlic
  • 1 Tablespoon yellow mustard
  • 1 Tablespoon Worcestershire sauce
  • 2/3 cup ketchup
  • 2/3 cup brown sugar, packed
  • 1/2 teaspoon each of salt and pepper, or to taste
  • 1 (13-ounce) package Smoked Sausage, cut into round slices
Instructions

Combine all ingredients except the sausage in a large pot or Dutch oven and mix everything together well. Stir in the sliced sausage.
Cook over medium heat, stirring frequently, until mixture begins to boil. Reduce heat to low and simmer, uncovered, for 30 to 40 minutes.
As a main dish, serve in a bowl with a side of cornbread or crusty bread, or serve over rice. Or serve on its own as a side dish
Note: To make in a slow cooker, cover mixture and cook 3 hours on high or 7 hours on low, until mixture is thick and bubbly.
