Mississippi pot roast is a classic comfort meal. Not only is it a super easy, leave it and forget it type of meal, but it is a meal your whole family will love.


Mississippi pot roast is perfect for any busy weeknight or as the star of the show for any dinner party.



The ranch seasoning, au jus gravy mix, and pepperoncinis create an explosion of flavors on top of a chuck roast.

The juices from the chuck roast and seasonings create the perfect sauce for mashed potatoes or rice.

Cooking the chuck roast in the crockpot creates a tender cut of meat that easily shreds and melts in your mouth.

Serve over mashed potatoes or rice and with your favorite vegetable for a well rounded meal.

Ingredients

  • 2-3 pounds chuck roast
  • 1 packet ranch dressing mix
  • 1 packet au jus gravy mix
  • 1/2 stick butter, sliced into cubes
  • 4-6 pepperoncinis 
  • 3/4 cup beef broth or water
Instructions

Place the chuck roast in the crockpot.
Sprinkle the ranch and au jus seasonings over it
Place the butter and pepperoncinis on top.
Pour the pepperoncini juice (or water) along the bottom of the dish.
Shred and serve in the meat juices with extra pepperocinis, if desired.
Tips
  • To thicken broth/drippings, add a cornstarch slurry (1 part cornstarch to 1 part cold water, mixed) to simmering broth in 1 - 2 tablespoon increments until desired consistency is reached.
  • This can be stored in an air tight container in the refrigerator for 3-5 days.
