Crockpot Beef and Noodles

This time of year calls for comfort foods. I also love using the crockpot this time of year also. It just makes clean up easier and everything is in one pan. I used a rump roast for this recipe but you can use any cut of roast you like. I add the roast to the crock pot along with some beef broth season it with salt and pepper and any other seasonings you like, I used a whole carton of broth. The seasonings I added was onion powder and garlic powder and parsley flakes. I cook the frozen roast on low overnight so it is ready after church. I take out the roast and keep it warm in the oven. Turn the crockpot on high until it boils and add the wide egg noodles. It takes about twenty minutes until they are done. Then I add the roast back in and serve over warm mashed potatoes.

I serve it over mashed potatoes. This is definitely comfort food.

The roast creates a wonderful broth.

I add a couple of cups of water to the broth before adding the noodles.

I turn it on high to cook the noodles.

I use a slurry to thicken the gravy and noodles.

So so good!

Ingredients

  • 1 roast
  • 4 c wide egg noodles
  • 2 c beef broth
  • Salt and pepper
  • 1/2 t onion powder
  • 1/2 garlic powder
  • 2 c water
Instructions
Crock Pot Beef and Noodles
Put the roast in the crockpot along with the seasonings and broth.
I cook mine frozen overnight
Take out roast when it is cooked throughly and fork tender.
Turn crockpot on high when bubbly add the noodles and cook until tender.
