Have you ever had a chicken meatball?? What about a baked chicken meatball??This is about to be your new favorite go to low-carb, quick & easy snack, main entree, or fun appetizer! Even your kids will rave about how tasty these are! The crispy bottoms and moist flavorful insides will make you mom, dad, or host of the year!! ( ; With the holidays coming up this will be a crowd favorite. Imagine biting into a crispy seasoned crust and discovering a juicy perfectly seasoned meatball. Dip them in BBQ or your favorite dipping sauce and ENJOY over and over again.

Ingredients

  • 1 pound ground chicken 2 tablespoons olive oil
  • 1 egg
  • 1/2 cup shredded parmesan cheese
  • 1/2 cup panko crumbs
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried parsley
  • 1/2 teaspoon garlic powder
  • 2 tablespoons olive oil
Instructions

Preheat your oven to 400 degrees. Cover two sheet pans with foil, and lightly spray with non-stick spray.
In a medium bowl, mix every ingredient listed above until well combined.
Use a small cookie scoop, spoon, or your hands to roll the meat mixture into 20 small meatballs.
Evenly spread out the meatballs on the sheet pans.
Bake for 25-30 minutes, or until golden and cooked through. Sprinkle with extra dried parsley and serve warm with your favorite dipping sauce, I loved it in BBQ!
You can also freeze these to use for salads, soups, or just reheat to eat by itself. ENJOY! (:
