Cast Iron Potatoes and Bacon

These cast iron potatoes and bacon are so good and they are very simple to make. At our house, we like to have potatoes a few times a week with our supper so I am always trying out new variations to add to our rotation. I definitely will be making these regularly! They are cooked in butter and bacon grease so they are not the healthiest by any means, but they sure are delicious! If you do not have a cast iron skillet, you can soften them up in a regular skillet and then put them in an oven safe dish before baking.

Ingredients

  • 2 large russet potatoes
  • 4 Tbsp butter
  • 1 Tbsp olive oil
  • 1/2 Tbsp Worcestershire sauce
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp parsley
  • Salt & pepper to taste
  • 3 strips of bacon
Instructions

Preheat oven to 375°.
Wash, peel, and dice potatoes into bite sized pieces.
Heat cast iron over medium heat and add the butter.
Place potatoes in a bowl and toss with olive oil and Worcestershire sauce.
Season with garlic powder, paprika, parsley, and salt & pepper.
Chop up the bacon and add it to the cast iron along with the potatoes.
Cook for 10 minutes, tossing occasionally.
Place the cast iron in the oven and roast for 30 minutes or until potatoes are tender and golden brown and the bacon is cooked.
