Bacon Wrapped Dates With Goat Cheese and Pepper Jelly
My friend traveled around the Mediterranean and was nice enough to bring me back my favorite type of souvenier- food!! So, I had some giant dates gifted from their trip and this yummy classic sweet/salty/creamy appetizer was made. The remaining dates had been hanging out in my fridge for a while and I was thinking of ways to eat them. I had made date bars, and date chia pudding, and just eaten them plain. They were SO big and juicy-so completely different from the dates you find at the grocery store.
I am sure you have tried bacon wrapped dates before, and if not-you are in for a treat! I realized I had not made any savory recipe yet, and had always loved bacon wrapped dates when I have had them before. I served mine with jalapeño pepper jelly I made from this summer's jalepeno pepper plants in my garden. It was a such a nice sweet heat contrast to the heaviness of this appetizer. You can also purchase pepper jelly or jam which would make this much quicker than trying to make it on your own.
If you did not have pepper jelly, these dates would also be really good if you added fresh thyme to the goat cheese and drizzled the hot dates with a little bit of truffle honey right before serving!

Bacon Wrapped Dates With Goat Cheese and Pepper Jelly

Ingredients
Bacon Dates
- 16 dates, pitted
- 8 slices of bacon, cut into half cross-wise
- 4 oz goat cheese
- 16 toothpicks
- optional: (1) serve with pepper jelly OR
- (2) fresh thyme mixed in goat cheese and truffle honey drizzle for serving
Instructions
Bacon Dates
- Preheat oven to 350
- Slice dates in half lengthwise and remove pit (keep the date halves attached)
- Stuff goat cheese into the center cavity of each date, press together to close
- Cut bacon slices in half cross-wise and wrap around the date
- Secure bacon with a toothpick going all the way through the date
- Bake on a RAISED baking pan for 25-35 minutes depending on your oven temp and thickness of bacon. Rotate the dates after 10 minutes and again after 5-8 minutes and to the final side for another 5-8 minutes.
- Let cool slightly and serve with pepper jelly
Tips
- The thicker your bacon, the longer your bake time will be. Check frequently.
- Use a rimmed baking sheet or bacon grease will get everywhere.
