If you love a nice slice of rich chocolate cake, you are going to love this yummy treat!

Before you go thinking this might not taste good, trust me… you won’t even taste the zucchini and it makes the bread so fluffy and moist!

I love zucchini bread to begin with, but by adding in cocoa powder AND semi sweet chocolate chips to the batter it takes this simple bread to the next level.

I love making a special treat like this weekly to pack in my kids lunches or to have on hand for a snack when we are craving something sweet. It makes a nice change from banana bread or oatmeal cookies, and since there is zucchini in it, it’s healthy right? 🤣

Begin by peeling and grating three medium zucchini. After you grate the zucchini it is very important to squeeze out as much of the liquid from it as you can. You can do this by simply using your hands or putting it in a colander and pressing down on it to remove the liquid.

Once you have made the batter pour it into a very well greased 9x13 pan. I prefer to use butter to grease the pan as I like the flavor it gives and I find that it does a great job at keeping the bread from sticking. Place the tray in a preheated 350 degree oven for 45 minutes.

The bread will be done when a knife or toothpick inserted into the middle of it comes out clean.

Remove from the oven and let cool before cutting it up into squares.

If you can’t resist waiting and happen to try a piece while it’s still hot, the ooey gooey chocolate chips never disappoint!

This bread is so light and fluffy, you could almost call it a cake!

Ingredients
Batter
  • 2 cups all purpose flour
  • 1 cup sugar
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 3 peeled, grated and drained zucchini
  • 2 eggs
  • 1/2 cup unsweetened applesauce
  • 3 tbsp milk
  • 1 tsp vanilla
  • 3 tbsp cocoa powder
  • 1 cup semisweet chocolate chips
Instructions

Preheat the oven to 350 degrees.
Peel, grate and drain the excess liquid from the zucchini.
In a large bowl or stand mixer combine the wet ingredients. Slowly add in the dry ingredients and mix until everything is well incorporated.
Pour the batter into a well greased 9x13 inch pan.
Bake in the oven for 45 minutes.
Let cool before slicing and serving.
Tips
  • Store in an airtight container once cooled completely.
