Okra is one of my favorite veggies! I can have okra in all forms, be it fried or in the form of a curry. Many people run away from okra because of its slimy nature. But if cooked correctly this veggie is an absolute delight to the taste buds. In India, okra is cooked in so many ways, so you can never get bored of the same dish


Okra comes from a large vegetable plant; it has a mild flavor as well as a unique texture. I have used frozen okra here, you can use without frozen-wash it , wipe it and cut into small pieces.

Ingredients
For preparing
  • 200 grams okra/lady finger/bhindi(Okra)
  • 2 Green chillies chopped
  • 2 tsp yogurt
  • 1 cup finely chopped onions
  • 1 cup finely chopped tomatoes
  • 1/2 tsp cumin seeds
  • 1/2 tsp coriander seeds
  • 1/2 tsp hing (asafoetida)
  • 1/2 tsp red chilli powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp garam masala - optional
  • 1 cup boiled potatoes
  • 3 tbsp oil
  • Salt, to taste
Instructions
For Making
In a pan/kadai heat the oil
Add in cumin seeds, coriander seeds, once it crackles, add hing, chillies, onions, tomatoes sauté, salt until it turns golden brown.
Now add red chilli, turmeric powder,salt, add boiled potatoes. 
Heat 1 tablespoon oil in a non-stick pan, sauté okra on medium heat until it turns tender and the color changes to dark green, about 8-10 minutes.
Add in the fried okra. Stir few times
Next, sprinkle garam masala, salt to taste mix well.
Tips
  • add Mango power if the okra is sticky while cooking
  • Heat 1 tablespoon oil in a non-stick pan, sauté okra on medium heat until it turns tender and the color changes to dark green, about 8-10 minutes.
