Easy and nutritious, perfect for weaning babies and toddlers


I am a huge fan of Baby-Led Weading (BLW) and followed the principles for both my children.


My personal philosophy is that the kids should eat exactly what us adults have, however there are times when what we are having may be difficult for my daughter to handle still or I need something quick and easy to put in the kids’ lunchbox. This is when these sweet potato fingers come in super handy!!! They are perfect to batch-cook too and keep in the fridge or freezer!


I got the idea from a friend but gave them a bit of a pizza flavour. They are actually delicious! They have become something I make weekly now, and it’s time to share the recipe with all of you!

Ingredients

  • 4 small sweet potatoes (about 12oz)
  • A splash of olive oil
  • 1/2 cup mozzarella, shredded
  • 1 tbsp oregano
  • 1 tbsp tomato paste
  • Some veg (like a handful of wilted spinach or 1 grated carrot)
  • About 5 tbsp breadcrumbs
Instructions

Peel and chop up the sweet potatoes and place them in a roasting tin or baking dish.
Drizzle with a little olive oil and bake in the oven for 15-20 minutes at 356F, until they are nice and soft. Let them cool down for a few minutes.
Transfer them to a bowl and mash them with either a fork or potato masher. Mix in the oregano, grated mozzarella and tomato paste. Crumble in or grate the veg, then start adding the breadcrumbs one spoonful at the time until you reach the a consistency that is not too wet and not to dry, easy to mould into a shape!
Take a spoonful of mixture, roll it into a little sausage and place it on some baking parchment or baking dish.
Bake at 356F for around 15-20 minutes, until the outside looks dry and they hold their shape if you pick them up. They will still be nice and soft in the middle. Leave them to cool for a few minutes before serving or store them in the fridge for up to 5 days.
Tips
  • Tip: you can use any cheese and veg you have in the fridge or leftovers! Cheddar, broccoli, mushy peas, etc. You could even add leftover cooked cod, or cooked ground meat.
