When the craving for cheesecake hits, there is nothing more satisfying than a cup of cheesecake fluff with extra whipped cream. A luxurious combination of cream cheese, whipped cream, marshmallows, and fresh strawberries, this strawberry cheesecake fluff is something of dreams.


The beauty of this cheesecake fluff recipe is not only that it is made from seven ingredients, but that, unlike normal cheesecake, you do not have to wait overnight to enjoy it. The preparation and mixing time takes only 15-minutes, and the setting time takes but 2-hours!


What is Cheesecake Fluff?


Cheesecake fluff is a no-bake dessert comprised of cream cheese, whipped cream, sugar, and flavorings. In addition, this recipe has mini marshmallows which bring the texture and flavor of the dessert to new heights.


Cheesecake fluff has all the goodness of cheesecake filling, without all of the extra work and time. Not to mention, it can be eaten by the spoonful, which is a major plus.


Ingredients

  • Heavy Whipping Cream - The cream needs to be cold for whipping.
  • Confectioners' Sugar - Sifted.
  • Pure Vanilla Extract
  • Cream Cheese - Softened at room temperature.
  • Strawberry Preserves - Store-bought or homemade.
  • Fresh Strawberries - Cut into small bite-sized pieces. Reserve extra whole strawberries for garnish.
  • Mini Marshmallows

You can make this recipe keto. Here's what you will need to do:


  1. Substitute powdered erythritol for the confectioners' sugar.
  2. Use store-bought or homemade sugar-free (keto-friendly) strawberry jam.
  3. Omit the marshmallows or use keto marshmallows.

Instructions


The most difficult part of this recipe is waiting for it to chill and set. With exception to the two-hour chill time, the remainder of the process takes about 15 minutes.

  1. Whip the Cream: In the bowl of a standing mixer with the whisk attachment, whip the heavy cream until soft peaks. Next, add the sifted confectioners' sugar and vanilla extract. Whip until stiff peaks have formed. Transfer whipped cream to a separate bowl.
  2. Whip the Cream Cheese & Preserves: In the same mixing bowl with the same whisk attachment (no need to rinse) whip the cream cheese and strawberry preserves until light and fluffy.
  3. Fold the Cream into the Cream Cheese Mixture: With a spatula, carefully fold ¾ of the whipped cream into the cream cheese mixture. (The remaining ¼ of the whipped cream will be used for garnish.)
  4. Stir in the Marshmallows & Strawberries: Gently fold the marshmallows and strawberry pieces into the cream mixture.
  5. Chill & Serve: Cover the bowl with plastic wrap and chill the fluff in the fridge for 2 hours. Serve with the remaining whipped cream and additional fresh strawberries.

  2. The cream cheese should be at room temperature to avoid any lumps of cheese in the final product. Therefore, you should pull the cream cheese out of the fridge an hour before making this dessert.
  3. Cool Whip can be a substitute for homemade Chantilly cream. I have not, however, tried using it within this recipe myself. So, you may need to make some adjustments if using.
  4. Graham cracker crumbs make a delightful addition to this recipe. In particular, they mimic the idea of a graham cracker crust. To use, sprinkle crumbs on the bottom of the serving dish and sprinkle additional crumbs as a garnish.
  5. If you love chocolate, add miniature semi-sweet chocolate chips to this Strawberry Cheesecake Fluff recipe. Fold in ½ cup of mini chips alongside the marshmallows and strawberries. Similarly, you can garnish the portions with chocolate-covered strawberries.
