Rhubarb and Berry Compote

Today I'm sharing a super easy rhubarb and berry compote with you. If you don't like rhubarb simply omit it and you can just have an easy berry compote. You can see more of my crazy creations here

You'll need:

  • 2 cups Rhubarb
  • 2 cup Strawberries
  • 1 cup Blueberries
  • 1/2 cup Sugar
  • 2 Tbsp Lemon Juice
  • Cornstarch


I placed 2 cups chopped rhubarb, 1 cup strawberries, 1 cup blueberries, 1/2 cup sugar, and 2 tablespoons lemon juice in a saucepan. I cooked on medium heat and waited for the fruit to break down.

I decided to thicken it a little by making a mixture of 1 tablespoon of cornstarch, and a little bit of water. I slowly stirred this into the rhubarb mixture. Once I got the consistency I desired, I removed the compote from the burner.

You can let it cool at this point and freeze it for later if you like. You can also serve this over ice cream, or spread it on toast or bread.

Ingredients
