Beer Batter Fish and Chips

One of the most alluring scents to me has got to be fish and chips. Whenever I go to the beach or the harbor, I crave the familiar crunch and hit of salt of the iconic combo of fish and chips. I always thought they were difficult and time consuming to make, until I came up with this recipe and realized it's not so bad at all, and the result - totally worth all of the effort! A little tip if to keep the fish warm in the oven while you're frying the chips again. Set the oven to around 100 degrees Celsius (210 degrees Fahrenheit) and let the fish sit there to keep warm until the chips are ready.

Ingredients

  • canola oil (for frying)
  • 6 medium potatoes, peeled and cut into strips
  • 12 mini fish fillets of your choice
  • 1 cup plain flour
  • 1 teaspoon salt
  • 1/4 teaspoon onion powder
  • 1/2 teaspoon garlic granules
  • 350 ml beer of your choice
Instructions

Place the potato strips into a medium-sized glass bowl and fill it until the sweet potato is immersed with cool water. Let it sit for half an hour.
In the meantime, prepare the fish batter. Mix together the flour, salt, onion powder and garlic granules. Add in the beer.
Using a colander, dispose of the water and rise the potato again using cool water. Dry off the potato using a tea towel.
In a large frypan, heat up oil (around 3 cm or 1 inch deep) on a high heat. Add in the potato and fry for around 3 minutes or until the potatoes are just beginning to brown. Remove the potatoes from the fry pan and place on a plate with paper towel to soak up the extra oil and set aside.
Dip each piece of fish into the batter and place it straight into the hot oil. Cook for around 3 minutes rotating each piece so both sides turn golden brown. Place the cooked fish on a plate with paper towel, like the chips.
Place the chips back into the coil and fry for another 3 minutes until they have properly browned. Take the out of the fry pan and place them on resh paper towel.
Plate the fish and chips and serve hot.
