Cheese and ham is one of my favourite combinations - so much so that I named my profile after it!

I love a Croque monsieur or a croque madame - essentially a posh cheese and ham toastie, but they can take a long time to make and require ALOT of butter. So I came up with this idea - which is easier to make, offers the same satisfaction and is a bit lighter on the calories.

They are really easy to make and so versatile. You can use whatever cheese you have in the fridge - or add some chopped peppers, roasted tomatoes on the side - whatever you fancy.

  • 4 slices bread
  • Butter
  • 4 slices good quality ham
  • 4 eggs
  • 2 handfuls grated hard cheese (cheddar or Gruyere work well)
  • Cracked black pepper
  • Chives, chopped (optional)

Preheat the oven to 200℃
Lightly toast the slices of bread and butter them while still warm.
Use a cookie cutter or a large glass to cut out holes from the centre of each piece of bread. You can do this freehand too if you can't find anything the right size. Set the circles on a baking tray with the bread 'frames' beside them.
Tear the ham into big strips and use these to line the holes of each bread 'frame', to create a bottom with bits of ham overlapping up to the crust.
Crack an egg into each hole.
Take the grated cheese and scatter around the edge of the eggs and onto the circles of bread.
Place the baking tray in the oven and cook for somewhere between 5 and 10 minutes. The exact time will depend on the size of your egg, size of the hole, temperature and thickness of the ham so I can only give you a guide. Ideally the whites should be cooked through but the yolk should still be wobbling when you rock the baking tray - this will give you a nice runny egg for dunking.
Once you're happy with the cooking, serve up on plates and scatter with the chopped chives. Enjoy!
