Dark Chocolate Almond Caramel Corn. It’s so fun to come up with one of my favorite sweet snacks. I love air-popped popcorn, dark chocolate covered almonds and caramel so naturally I combined the three. I use the dark chocolate-covered almonds from Trader Joe’s but Costco has great ones as well (I’m just too nervous to have that amount in my house 😂). Once you make a batch, you will have to store this in your fridge because the chocolate will melt. It is so yummy with a little chill on it. I dare you to make this last through the weekend!
Dark Chocolate-Covered Almond Caramel Corn

Ingredients
- 10 cups popped popcorn
- 1 cup packed brown sugar
- 1/2 cup unsalted butter, cubed
- 1/4 cup corn syrup
- 1/4 teaspoon salt
- 1/4 teaspoon baking soda
- ¾ cup dark chocolate covered almonds
Instructions
- Preheat the oven to 200ºF. Line a sheet tray with parchment or a silicone baking sheet.
- Place popcorn in a large bowl.
- In a large heavy saucepan, combine the brown sugar, butter, corn syrup and salt. Cook over medium heat, stirring occasionally, until mixture comes to a rolling boil. Cook and stir until candy thermometer reads 235ºF-238ºF.
- Remove from the heat and stir in baking soda. Pour over popcorn and quickly mix, combining well. Add the dark chocolate almonds. Chocolate will melt!
- Transfer to the sheet tray. Bake for about 45 minutes, stirring once.
- Remove from the oven and let cool. Transfer to refrigerator to reset the chocolate.
- When you are ready to eat it, remove from the fridge and break up the clusters. Store in a plastic bag in the fridge.
