Dark Chocolate Almond Caramel Corn. It’s so fun to come up with one of my favorite sweet snacks. I love air-popped popcorn, dark chocolate covered almonds and caramel so naturally I combined the three. I use the dark chocolate-covered almonds from Trader Joe’s but Costco has great ones as well (I’m just too nervous to have that amount in my house 😂). Once you make a batch, you will have to store this in your fridge because the chocolate will melt. It is so yummy with a little chill on it. I dare you to make this last through the weekend!

Ingredients

  • 10 cups popped popcorn
  • 1 cup packed brown sugar
  • 1/2 cup unsalted butter, cubed
  • 1/4 cup corn syrup
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking soda
  • ¾ cup dark chocolate covered almonds
Instructions

Preheat the oven to 200ºF. Line a sheet tray with parchment or a silicone baking sheet.
Place popcorn in a large bowl.
In a large heavy saucepan, combine the brown sugar, butter, corn syrup and salt. Cook over medium heat, stirring occasionally, until mixture comes to a rolling boil. Cook and stir until candy thermometer reads 235ºF-238ºF.
Remove from the heat and stir in baking soda. Pour over popcorn and quickly mix, combining well. Add the dark chocolate almonds. Chocolate will melt!
Transfer to the sheet tray. Bake for about 45 minutes, stirring once.
Remove from the oven and let cool. Transfer to refrigerator to reset the chocolate.
When you are ready to eat it, remove from the fridge and break up the clusters. Store in a plastic bag in the fridge.
