Chickpea Salad on Toast

Today I want to share with you one of my absolute favourite lunches. I am a keen sourdough bread maker, and every Wednesday we always have a fresh loaf on the table. My absolute favourite way of making a lunch out of it is to serve it topped with hummus and this simple chickpea flour.

You can also halven the recipe, using only half of the tin of chickpeas, and use the other half to make your own hummus, then you will have a fully homemade, delivious, nutritious and healthy lunch. For extra flavour, you can also use pickled onion instead of just raw onion.

  • 1 tin of chickpeas (1 1/2 cup when drained)
  • Handful of cherry tomatoes
  • 1/2 sliced red onion
  • 1/2 medium cucumber
  • Sourdough slice
  • Hummus
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tbsp cider vinegar
  • 1 tsp maple syrup
  • pinch of salt
  • 1 tsp parsley

Drain the chickpeas, cube the cucumber, quarter the tomatoes and slice thinly the onion. Put everything in a bowl.
Mix all the dressing ingredients together and pour over the salad. Mix well.
Toast a slice of sourdough, spread a generous amount of hummus on top and top with the salad and all its dressing.
This recipe makes enough salad for about 4 large bread toppings.
