A New Thanksgiving Staple: Leftover Turkey Quesadillas

Where waste is not an option—a rule where I’m from—there’s no shortage of options to explore. Turkey curry, turkey casserole, turkey pie, turkey chilli: all staples we’ve come to know and…well, tolerate over the years.


With the exception of last year, when my wife came up with this nifty little recipe out of nowhere. Leftover turkey quesadillas as the no-brainer you’ll have wish you thought of years ago.


What’s amazing about this recipe is how it’s wide open for experimentation. The ingredients listed below are basically just an overview of the foundations. As you’ll note, I’ve left out the herbs, spices, sauces and accompaniments—all for you to decide.


Personally, I load mine with a ton of fresh cilantro, a few dashes of Tabasco and a handful of chopped black olives. Drizzle with sour cream when done, dip in barbecue sauce or add even more cheese and salsa before finishing under the grill.


What I can tell you is that you’ll completely forget you’re actually eating a Thanksgiving byproduct. Plus, it’s the last time you’ll ever choke down a dry hunk of cold turkey straight from the refrigerator, simply because you’d prefer not to “waste it”.

When I say throwing these things together couldn’t be easier, I mean it. All of the weights and measures below are completely adjustable to your own liking, so feel free to go nuts.


In fact, pretty much anything you have left over from thanksgiving dinner can be tossed in and made into something amazing.

Ingredients

  • 2 whole wheat tortillas
  • 1/2 cup grated cheese
  • 1 cup leftover turkey shredded
  • 3 tbsp diced onion
  • 4 tbsp diced tomato
  • 1 tbsp chopped parsley
  • 1/2 cup grated cheese
Instructions

In a nonstick frying pan over medium heat place one whole wheat tortilla.
Sprinkle ½ cup grated cheese, shredded turkey, diced onion, diced tomato, chopped parsley and another layer of grated cheese.
Cover with the second tortilla on top and cook for about 2 minutes on medium-low heat.
Flip the quesadilla on the other side and cook for 2 more minutes.
Cut into 6 equal pieces and serve to enjoy.
