Stir-Fried Asian Beef

Ingredients
Beef Marinade
- 1/2 cup soy sauce
- 1/2 cup brown sugar
- 1/2 tsp ginger paste
- 1/2 tsp garlic paste
- 1/2 tsp chili flakes
- 1/2 tsp salt
- 2 tbsp olive oil
- 1/2 kg sliced beef (for stir-fry)
- 2 carrots, peeled and cut into strips
- 2 white onions, sliced into strips
- 2 red bell peppers, sliced into strips
- 1 head of bok choy, roughly chopped
Instructions
- In a large, sealable bowl, mix together the marinade ingredients.
- Mix the beef in well, seal and place in the fridge for at least hours.
- In a large saucepan, on a medium heat, fry the onion and carrots in a drizzle of olive oil.
- After a few minutes, when they begin to cook, add in the beef with the marinade and bring to a boil. Cover and let it simmer for 10 minutes.
- Add in the pepper and bok choy and gently stir in. let it simmer for 5 minutes and serve hot.
