Early in the week is a great time to do some meal prep, and this salad is a BANGER for anyone who likes cooked grains with some delicious accoutrement.


We find ourselves using things like barley, Israeli Couscous, farro or quinoa at least once a week, so why not try out something different with it!


This Barley salad with Chicken, cheddar, apple and walnuts is a filling winter salad that uses a lot of what you have in the fridge. What's great is you can swap up the grain, protein, fat (but still use some kind of cheese and nut, okay?) and it will be delish.

Ingredients
For the Salad
  • 2 cups cooked barley (follow your package instructions)
  • 2 cooked chicken breasts, diced
  • 1 green apple, diced
  • 150g of block cheddar, diced
  • 1.5 cups of raw walnuts
  • Mixed greens, for serving
  • 1/2 cup Mustard dill sauce (recipe below)
Mustard Dill Sauce
  • 4tbsp Dijon mustard
  • 2 tbsp sweet honey mustard
  • 1 tsp ground dry mustard
  • 3 tbsp sugar
  • 1 tbsp white wine vinegar
  • 1 tbsp meyer lemon vinegar (or just lemon juice)
  • 1/4 cup olive oil
  • 3 tablespoons chopped fresh dill
Instructions
For the Mustard Dill Sauce
Combine the mustards, sugar, and vinegar in a small bowl. Slowly whisk in the oil and stir in the chopped dill.
For the Salad
Toast walnuts in a pan over medium heat for 5 minutes until sizzling and fragrant. Allow to cool and chop into bite sized chunks.
Combine all salad ingredients (except for mixed greens) in a bowl and add in mustard sauce.
Stir until thoroughly combined.
Plate on top of mixed greens.
Add extra dressing as necessary.
