Caramel Apple Roll Ups

This time of year I love anything apple. Fall just brings that out in us. I needed something simple yet tasty for a get together recently. So I hunted my recipe books and came up with this version of several different recipes I found. Using the tortillas really makes this much easier that a pie crust. I was a little skeptical at first, i guess because I associate them with tacos. I made a home made pie filling but you could easily use a canned one from the store. I used a combination of Gala and Granny Smith apples. Just peel, core and chop your apples into bite size pieces. Try and keep them about the same size so they cook evenly. Then I added my cornstarch, cinnamon, sugar and water to the pan and cooked until slightly soft. Add that mixture to your tortilla shells, roll up and add to your buttered pan. Then you mix up and cook the caramel topping and pour over all. Let this set for about a half an hour to fourty five minutes and then bake. I served them with extra caramel topping and whipped cream on the tops of each. They were delicious and got eaten very fast!

I added cinnamon and sugar to the peeled and cut apples.

Cook on the stove with the water and cornstarch added. Cook until soft.

The filling looked good enough to eat alone.

Roll up the filling in the shells and place in the buttered pan.

Now cook the topping, what is better than sugar and butter?

Ingredients
Apple Pie Filling
  • 5-6 apples, peeled, cored and cut into bite size pieces
  • 1 tsp Cinnamon
  • 1 tsp Vanilla extract
  • 1/2 - 3/4 C Granulated sugar
  • 3/4 C water
  • 1/4 C Cornstarch
Sauce for Topping
  • 1/2 C Butter
  • 1/2 C Granulated sugar
  • 1/2 C Brown Sugar
  • 1/2 C water
  • 1 tsp Cinnamon
  • 8- Tortilla shells
Instructions
Pie Filling
Mix Apples with the cinnamon and sugar.
Add to pan.
Add in all other ingredients and cook on low until soft.
Butter a 9" x 13" pan.
Fill tortilla shells with apple mixture roll up seam side down.
To Prepare the topping
Mix all ingredients in the a sauce pan.
Cook on low to medium until bubbly.
Cook for three minutes.
Pour over rolled up tortillas
Let set for 30-45 minutes.
Bake in a 350 degree oven for 30 minutes.
Do not overcook, watch closely.
Tips
  • You can easily use canned apple pie filling.
