Instructions

A couple of hours before you are ready to make your fried rice or the night before cook up your white rice. I make my white rice in a rice cooker, like these -> here on Amazon.
Spread out your rice on a cookie sheet to allow to dry out some after it is done cooking, I let mine dry out for about an hour or two depends on what’s going on before dinner time.
Take your leftover smoked pulled pork and shred it if needed or grab it out of the fridge.
Whisk your eggs in a bowl and add just a splash of water, the water helps them to be a bit fluffier. Salt and pepper to the egg mixture.
Fire up your Blackstone griddle and re-oil it down if needed. I keep mine ready to go at all times so all I have to do is turn it on and re-oil it.
Spread out your pork and your rice to warm up, I did drizzle it with some soy sauce and dropped in my minced garlic as well.
Next, I add my vegetables to the meat and allow them to cook with the meat.
Then mix everything together with the rice, meat, and veggies onto one side of the griddle.
Pour your eggs onto the other side of the griddle allow to cook, if your griddle looks dry squirt on a bit more vegetable oil. These will get chopped up kinda like scrambled eggs in your rice.
Once your eggs are cooked mix the eggs into everything on the griddle.
Drizzle with soy sauce and allow to cook a couple more minutes on the griddle.
Serve and enjoy!!
