If you're in need of an easy meal prep item or a nourishing meal that you do not have the energy to put a lot of effort into, then I have the perfect meal for you! These vegan harvest bowls are loaded with healthy veggies, grains, and protein to help you not only get a healthy meal in, but an enjoyable one too! This is my go-to recipe when it comes to meal prep because a large majority of the steps can be done in an air fryer. Please note, that if you do not have an air fryer, you can also bake the chickpeas and carrots. Feel free to add in any additional veggies of your liking as well!

Ingredients

  • 1 can of chickpeas (washed & drained)
  • 2 tbsp of extra virgin olive oil
  • 4 large carrots (washed & peeled and chopped)
  • 1 bunch of kale (washed & dried)
  • Seasoning (I used Everything But the Bagel Seasoning)
  • 1 cup quinoa (washed)
  • Dressing (optional)
Instructions

Taking your chickpeas and chopped carrots, drizzle over 1 tablespoon of olive oil to ensure all pieces are coated. Add seasoning.
Pop the chickpeas and carrots into the air fryer at 400F for about 15 minutes (every 5 minutes, give the chickpeas and carrots a shake so that the air fryer can cook up all sides).
On the side, prepare your quinoa as instructed per the package.
Chop up the kale into smaller pieces and massage with the remaining tablespoon of olive oil to soften the leaves.
Now that all items have been prepared, assemble your bowls or meal prep containers each with quinoa, kale, carrots, and chickpeas!
I recommend drizzling these with your favourite dressing - I used a tahini-based dressing but feel free to use whatever you like!
