I am all about easy tasty recipes, and this new recipe is full of flavor and packed with nutrients. This high protein veggie bowl is the perfect meal, loaded with tasty and colorful veggies to add to your weekly meal plan. Trust me you will love it!



This tasty bowl, is gluten free, vegan and guilt free. The protein comes from the edamame beans (4 grams of per serving), the red lentil brown rice pasta (14 grams) and the almond butter dressing. Now, this dressing is so delish, tangy with a kick from the sriracha sauce. Just delish.


Here is the recipe for you to try it out and enjoy a tasty protein veggie bowl.


Servings: 2 veggie bowls


Veggie Protein Bowl

4 oz of Trader Joe’s red lentil brown rice pasta

1 cup of edamame

6 mini peppers thinly sliced

1 Persian cucumber thinly sliced

2 green onions thinly sliced

Everything but the bagel seasoning

Handful of cilantro


Asian Almond dressing

1/3 cup of olive oil

1/3 cup rice vinegar

1/4 of Tamari sauce or coconut aminos3 Tbsp of sriracha

2 Tbsp of maple syrup

1 tsp of ground ginger

Ingredients
Veggie Protein Bowl
  • 4 oz of Trader Joe’s red lentil brown rice pasta
  • 1 cup of edamame
  • 6 mini peppers thinly sliced
  • 1 Persian cucumber thinly sliced
  • 2 green onions thinly sliced
  • Everything but the bagel seasoning
  • Handful of cilantro
Asian Almond dressing
  • 1/3 cup of olive oil
  • 1/3 cup rice vinegar
  • 1/4 of Tamari sauce or coconut aminos3 Tbsp of sriracha
  • 2 Tbsp of maple syrup
  • 1 tsp of ground ginger
Instructions

Instructions:
Cook the pasta following package directions.
Prep the veggies. Thinly slice sweet mini peppers, cucumbers, green onions and rough chop the cilantro
Defrost 1 cup of frozen edamame or run it in hot water.
In a bowl whisk all the ingredients for the almond butter dressing. If the dressings feels too thick, simply thin it out by adding a little more of rice vinegar or warm water.
Once the past is cooked, run it in cool water for a few minutes. Drain and serve in bowl. Add a couple of spoonfuls of the dressing and mix well. Then add veggies, the edamame, cilantro, green onions, everything but the bagel seasning, drizzle more dressing and ENJOY!
