Ingredients

  • 1 packet, 500g macaroni
  • 300g baby spinach
  • 1 1/4 cup water
  • 250g canned sardine in tomato sauce
  • 2 tbsp olive oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1/2 cup shredded cheese
  • salt and pepper to taste
Instructions

Bring a pot of salt water to boil, cook macaroni according to packet instruction, about 8-10 minutes.
Meanwhile, add washed baby spinach with water in the blender and blend until puree and smooth.
Heat up a tbsp of olive oil in a pan, sauté and cook chopped onion for 1-2 minutes until fragrance. Add minced garlic and cook for a further 30 seconds.
Add spinach puree into the pan and on low heat simmer for 2 minutes.
Add cooked macaroni and stir to combine. Add shredded cheese and cook until the cheese is just melt.
Add tomato sardine and do a quick final stir until the sardine is warm enough. Add 1/4 cup of pasta water if desired. Salt and pepper to taste. Serve warm and enjoy!
