I’m calling this my Spicy Kitchen Sink Chorizo Pasta because I pretty much threw everything in here except for the kitchen sink. This is packed with flavor and honestly I’ve never had another sauce like this before. I was flipping through my Italian Cooking Encyclopedia and got the idea to change things up a bit with our pasta sauce. Here’s how my thought process works.


With all this quarantine, we are having to get pretty creative with our recipes. I read in the book “to add extra flavor in your sauce, add carrots” which I thought was an interesting concept. So I threw carrots, diced tomatoes, cilantro (because it was about to go bad) and some tomato paste into a blender with a couple of the spices. After tasting it, I wanted to add a little bit of sweetness to it (hence the ketchup). Now, this sauce was good but just by itself it would get boring very quickly. Regular ground beef wouldn’t do it justice either because the beef wouldn’t add too much flavor. I instead decided to opt in for door number 3, enter the Chorizo.


The sauteed Chorizo and onions were perfect for the sauce because it blends so well. The spiciness from the pork and the very slightly sweet flavor from the sauce merge perfectly. The addition of carrots and cilantro to the sauce added a lot of extra flavor. Also, if you have any stubborn kids at home that don’t like vegetables, this could be your Trojan horse. They’ll be eating healthy vegetables and would never know it.

Spicy Kitchen Sink Chorizo Pasta

Ingredients
Sauce
  • 1 12 oz Can diced tomatoes
  • 3 Garlic Cloves
  • 1 cup Carrots
  • 1 cup Cilantro
  • ½ tbsp pepper
  • ½ tbsp salt
  • ½ tbsp garlic powder
  • ½ tbsp onion powder
  • ¼ cup ketchup
  • 2 tbsp tomato paste
Pasta
  • 1 lb Chorizo
  • ¼ Onion diced
  • Noodles Any kind
  • ½ cup chicken broth
Instructions

Add all Sauce ingredients into a blender and blend (if needed add a slight bit of water to blend)
Saute Chorizo in skillet with diced onions
When chorizo is cooked and onions have soaked up all the juices, add in chicken broth and sauce
Continue stirring from time to time
In a pot, bring water to a boil and add noodles
Once noodles are cooked, strain and mix with chorizo/sauce mixture
Plate and enjoy!
