This is one of my favourite recipes to cook when I want something quick, easy, furious but without having to think too much! Soba noodles have such a great nutty flavour, and you can customise what vegetables or protein you use.


Below are some of my hints and tips for making it your own!

  • Customize the bowl with additional toppings like sliced radishes, cilantro, or lime wedges.
  • Adjust the peanut sauce to your taste by adding more or less honey, soy sauce, or other ingredients.
  • Make extra crispy chickpeas for snacking or save them for later use in salads or bowls.
  • If you prefer a spicy kick, add a dash of sriracha or red pepper flakes to the peanut sauce.

Ingredients

  • 8 ounces soba noodles
  • 1 cup shredded carrots
  • 1 cup sliced cucumber
  • 1 cup crabsticks, shredded
  • 1 cup crispy chickpeas (you can use store-bought or make your own)
  • 2 green onions, thinly sliced
  • Sesame seeds for garnish (optional)
Peanut sauce
  • 1/3 cup peanut butter
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon grated ginger
  • 1 garlic clove, minced
  • 2-3 tablespoons warm water (to achieve desired consistency)
Instructions

Cook the Soba Noodles:
Bring a large pot of water to a boil.
Add soba noodles and cook according to the package instructions (usually 4-5 minutes).
Drain and rinse the noodles under cold water to stop the cooking process.
Toss the noodles with a little sesame oil to prevent sticking and set aside.
2. Prepare the Peanut Sauce:
In a small bowl, whisk together peanut butter, soy sauce, rice vinegar, sesame oil, honey (or maple syrup), grated ginger, and minced garlic.
Add warm water gradually, stirring continuously, until the sauce reaches your desired consistency. Set aside.
3. Assemble the Bowl:
Divide the cooked soba noodles among serving bowls.
Arrange shredded carrots, sliced cucumber, shredded crabsticks, and crispy chickpeas on top of the noodles.
Drizzle the peanut sauce over the ingredients.
4. Garnish and Serve:
Sprinkle sliced green onions and sesame seeds on top for added flavor and presentation.
Toss the ingredients gently to combine.
Serve immediately and enjoy your delicious soba noodle bowl!
