Ingredients

  • 8 oz (about 225g) silken tofu
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/2 cup onion, finely chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup roasted red peppers, sliced (you can use store-bought or roast your own)
  • 1 can (14 oz) crushed tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Pinch of red pepper flakes (optional, for some heat)
  • 8 oz (about 225g) bucatini pasta
  • Fresh basil or parsley for garnish
  • Grated Parmesan cheese (optional)
Instructions

Prepare the Silken Tofu:
Drain the silken tofu and cut it into cubes.
Sauté Aromatics:
In a large skillet, heat olive oil over medium heat.
Add minced garlic and chopped onions. Sauté until the onions are soft and translucent.
Add Cherry Tomatoes and Roast Red Peppers:
Add halved cherry tomatoes and sliced roasted red peppers to the skillet. Stir and cook for a few minutes until the tomatoes start to soften.
Add Crushed Tomatoes:
Pour in the crushed tomatoes and stir well.
