  • 2 red peppers
  • 8 tomatoes
  • 1 garlic clove, minced
  • 1/4 cup extra virgin olive oil
  • Salt and pepper, to taste
  • 1 tsp dried oregano
  • pasta of your choice
  • 1 cup reserved pasta cooking water
Instructions
Method
1. Preheat your oven to 180°C (350°F).
2. Place the peppers, tomatoes, and minced garlic on a large baking tray.
3. Drizzle with extra virgin olive oil and sprinkle with salt, pepper, and dried oregano.
4. Roast in the oven for about 20minutes, or until the vegetables are soft and slightly charred.
5. While the veggies are roasting, cook your pasta according to package instructions.
6. Once the veggies are ready, transfer them to a blender or food processor, along with 1 cup of the reserved pasta cooking water.
7. Blend until smooth and creamy.
8. Serve the sauce over your cooked pasta, garnished with fresh basil if desired.
